Avocados are such a fantastic source of nutritions for our kids, there are nearly 20 vitamins and minerals in them! Avocado pasta is one of our favourite in my house. This time I tried to do a creamiest version of it, I think my little Grace enjoined much more this one! Letās give it a try, Iām sure your little humans will love it, and you too!
Ingredients:
250g pasta (uncooked weight)
2 ripe avocados, peeled and stone removed
5 tablespoons olive oil
1 tbsps lemon juice
Pinch of salt
2 tbsps milk (I used oat, can be substitute with water)
Dash of water Iād necessary
Salt & pepper, dry oregano, parsley or basil to taste
Mozzarella, cut in cubes (quantity on your choice)
Cherry tomatoes, chopped really small for kids
Optional for serving: Parmesan cheese
Method:
Cook pasta according to package instructions.
In a food processor add avocado (reserving 1/2 an avocado), lemon juice, olive oil, milk and salt. Pulse until smooth and creamy. Add a dash of water if necessary.
In a large bowl, combine pasta, avocado sauce, cherry tomatoes (finely chopped), the mozzarella cubes and the remained avocado, chopped.
Season to taste, serve with Parmesan cheese if desired.
