3 INGREDIENTS SWEET POTATO BISCUITS
This is a really easy sweet potato biscuit recipe. Great for snacking or served as a side for dinner these biscuits are made with 3 simple ingredients and are a great way to get your kids to help in the kitchen!

Ingredients

  • 200g sweet potato, cooked

  • 180g self raising flour

  • 50g butter or dairy free butter, melted

Method

  1. Pre-heat the oven to 180°C.

  2. Place the cooked sweet potato in a large bowl and mash them with a fork.

  3. Add the melted butter and the self raising flour to the bowl and mix all together to make a dough, using your hands (add more flour if the dough is too sticky).

  4. Roll out the dough on a floured surface (I did it on a silicone mat) until is 1/2 cm thick and cut out into shapes with a cookie cutter.

  5. Place them on baking parchment /silicone mat on a baking tray and bake for 10 minutes (180°C) - keep checking to make sure they don't overcook, all ovens can be different

  6. Once cooked, leave to cool and enjoy!
