These Apple Cookies are healthier than usual cookies but still delicious. Grace loves them! These cookies are quite light and fluffy, soft to the bite, perfect for breakfast or as a snack!
Ingredients
2 apples, peeled and chopped in small cubes
170g Greek yogurt (you can use dairy free)
130g all purpose flour
30g icing sugar (I used brown)*
2 tbsp coconut oil or sunflower oil
Pinch of ground cinnamon
1 tsp baking powder
1 tsp vanilla extract (optional) *NOTE: you can make icing sugar at home blending granulated sugar until fine
Method
Preheat oven to 180 and two inch baking sheets with silicone baking mats or parchment paper.
Place flour, icing sugar, cinnamon and baking powder in a large bowl and mix well.
Add yogurt, coconut oil and mix until well combined.
Add chopped apples and mix.
Spoon the dough onto prepared baking sheets leaving some space between cookies.
Bake for 15-20 minutes until the top and the bottom are golden.
Let cool on baking sheet several minutes then transfer to a wire rack to cool completely.
