Made with healthy ingredients such as apple, yogurt and oats, these muffins are an excellent snack or breakfast!
Ingredients
2 eggs
120g plain yogurt (can be substitute for dairy free yogurt or a flavoured yogurt)
50ml milk of choice
100g plain flour
80g oat flour (can be substitute with plain flour)
60-80g coconut sugar or brown sugar - optional (avoid for younger babies)
2 tsps baking powder
1 tsp cinnamon (optional)
1 tsp vanilla extract (optional)
2 small apples, peeled, cored and chopped

Method
Preheat the oven to fan 180Ā°C fan and line a 12-hole muffin tray with muffin cases.
In a bowl mix together the dry ingredients: flour, oat flour, sugar and baking powder.
In a large bowl combine the wet ingredients: eggs, yogurt, milk and vanilla extract.
Then combine the dry ingredients into the wet ones. Once nice and smooth, stir through the apple pieces.
Divide the batter between muffin cases and bake for 15-20 minutes until golden, risen and cooked through (if a toothpick inserted into the middle of the muffin does not come out clean, place back in the oven for 5-10 minutes more).
Once cooked, remove from the oven and leave to cool.
