AUBERGINE & COURGETTE PIZZAS with SWEET POTATO FRIES šŸ•šŸŸ


As Italians, we're obsessed with pizza šŸ˜ So I always look for a new, healthy way to do it. And these aubergine and courgette pizzas are a delicious way to eat vegetables! You can use the topping of your choice, but we chose the classic Margherita! šŸ˜‹

Ingredients:

for the Pizzas

  • 1 Aubergines

  • 1 Courgettes

  • 250g tomato passata

  • 1 mozzarella (125g), cut in small cubes

  • 2-3 basil leaves

  • 1/2 tsp dry oregano

  • Salt & pepper to taste


for the sweet potato fries

  • 500g sweet potato

  • 1 tbsp olive oil

  • salt & pepper

  • 5-6 springs fresh rosemary


Method:

  1. Cut the aubergines and courgettes into slices (round or you can slice them lengthwise) of approximately 1-1.5 cm thick.

  2. Grill each side until golden in colour with grill marks and place on a baking tray.

  3. Then grab a bowl and make the tomato sauce mixing the tomato passata basil, oregano, then season to taste.

  4. Top the grilled vegetable with some tomato sauce and mozzarella cubes.

  5. Bake for approx 10-15 mins until the mozzarella has melted.


For the sweet potato fries:

  1. Peel and cut the sweet potato into fries, place on a baking tray and mix with olive oil, rosemary, salt and pepper.

  2. Bake in the oven at 200 degrees for 20 minutes or until gold and crispy.
