This Aubergine Parmigiana is the easy lunch or dinner and is super kid friendlyšIt's easy, healthy and so delicious! There is something better than the combination of aubergines, cheese and tomato? Grace š§š¼loved it, she finished everything and I gave her an other small portion of parmigiana and she ate it all !!! š I served it with some peas and sliced banana topped peanut butter! š+š„= ā¤ļø
Ingredients:
2 aubergines
1 mozzarella cut in pieces ( my one was 125g)
100g grated Parmesan
80g chopped onion
30g olive oil
1 garlic clove
550g tomato passata or chopped tomatoes ā¢ 5-6 basil leaves
3/4 tsp salt
ground black pepper to taste
Method:
Cut aubergines lengthways, into 0.5cm slices (or as thin as you can do!)
Grill each side until golden in colour with grill marks and set aside.
Now prepare the tomato sauce.
In a saucepan gently cook the chopped onion and garlic with the olive oil until golden.
Add the tomato passata, basil, salt and pepper and cook on a medium heat for about 20 minutes.
When the tomato sauce is ready you can start doing the parmigiana layers.
Using a deep baking dish (20cm x 20cm), spoon 3-4 tablespoons of the tomato sauce and spread from edge to edge to ensure nothing sticks.
Layer with aubergines to cover the bottom of the dish, cover with more tomato sauce, and top with some mozzarella pieces and the grated Parmesan. Repeat, layering up.
The last layer should be aubergines, sauce , mozzarella and Parmesan.
Heat oven to 180C.
Bake for 30 mins until the top is crisp and golden, and the tomato sauce bubbling.
Rest for 10 mins, then scatter with basil leaves and serve! š
