These delicious and easy baby apple strudel are a healthy treat the whole family will love!
Ingredients:
3 baking apples, I used royal apples cutter in small pieces
1 sheet of ready rolled puff pastry
2 tbsp brown or coconut sugar (optional)
1/2 tsp ground cinnamon
Milk of choice for glaze

Method:
In a medium saucepan add the apple pieces, water (just enough to cover the apples), cinnamon and sugar and cook at low heat with the lid, stirring occasionally, until the apples are very soft and the water is evaporated. (Add extra water if needed)
Remove from the heat and let them cool down. (10 min is enough)
Prepare a baking sheet with parchment paper and preheat oven to 180ĖC.
Unroll the puff pastry and cut into 4 equals squares.
Spoon the cooked apples onto the middle of each square (see photo), and then roll up to seal.
Cut in 4 and place on the baking tray
Brush the baby strudel with a little milk to secure.
Bake in the oven for 20 minutes or until puffy and golden brown.
Remove from the oven and leave to cool on the baking tray for 10 minutes.
