This is a healthy and easy way to serve porridge to our kids! I really can’t understand if these are porridge fingers or flapjack, I just know are super delicious! And if you love the combo peanut butter & jam too, I’m sure you will love this recipe!
Ingredients
1 ripe banana🍌
150g oats
180 ml milk🥛 (I used oat)
1 tbsp chia seeds or flax seeds
1 tsp vanilla extract (optional)
1 big tbsp strawberry jam 🍓(homemade or store bought)
1 big tbsp smooth peanut butter 🥜 (or any nut butter you like)
NOTE: I didn’t add any sugar becauseI used a store bought jam with sugar in it, but you can add 1 tbsp of maple syrup/agave to the mixture if you like a sweeter taste.
Method
Preheat the oven to 180°C (350F) and grease a loaf tin with coconut oil/or butter (I do it with a silicone kitchen brush to use less oil)
Mash the banana in a large bowl, add in the vanilla and mix.
Add oats, chia seeds/flax seeds and milk and stir well.
Spoon the mixture into the prepared loaf tin and smooth over using the back of a spoon, ensure the mixture is evenly spread.
Melt separately your peanut butter and your jam in the microwave or in a saucepan.
Spoon both over your porridge and spread gently over the top using a teaspoon.
Bake at 180°C for 20-25 minutes, until firm.
Once cooked allow to sit for 5-10 minutes before cutting into strips or squares and remove from the tin using a slotted turner/ spatula.
