This is Graceās favourite breakfast! I love this so much because is super healthy, quick and itās always a winner! Perfect for breakfast or for a delicious snack, I serve it with yogurt and fresh fruits or also with some smooth peanut butter as dip.
Ingredients
(makes 3-4 baby fritters)
1 ripe banana, medium
30g oat flour (whizz rolled oat up in a blender)*
Big handful of blueberries or raspberries
1 tsp vanilla extract (optional)
Pinch of cinnamon (optional)
Coconut oil for cooking
*NOTE: add more oat flour if you think the batter itās too wet (this depends on the size of the banana you use)

Method
Mash the banana in a medium bowl
Add oat flour, blueberries, cinnamon and vanilla (if used)
Mix gently until well combined
On a non sticky pan, heat a good quantity of coconut oil on medium heat
Once warm, spoon in one or two tablespoons of the batter into the pan and using a spoon to spread out the mixture
Fry fritter for 2-3 minutes per side, until golden brown
Let them cool a little before serving
