Ingredients:
300g carrots
200g potatoes
60d grated Parmesan
cheddar cheese, block - cut into small cubes (or mozzarella)
80-100g bread crumbs
pinch of salt
ground black pepper
olive oil for cooking

Method:
Peeling and cut the carrots and the potatoes.
Boil them until al dente but fully cooked. They should not be too mushy.
Let them cool a bit.
Cut cheddar cheese block (or mozzarella) into small cubes.
In a food processor place carrots, potatoes, grated Parmesan, bread crumbs, salt and pepper and pulse until a soft ball is formed. If the mixture is too sticky add more bread crumbs, should be a soft ball. (You can do this without a food processor, just mashed the vegetable first, then add all the rest of the ingredients and mix well)
With lightly wet hands - pick up a tablespoon sized ball of potato mixture and flatten into a small pancake.
Place a cube of cheese in the center and wrap the potato mixture around the cheese. Repeat.
In a non sticky pan heat a bit of olive oil over medium/high heat.
Fry the balls in batches until browned on all sides.
Transfer fried balls to paper towels to drain excess oil.
