Because gnocchi are always a good idea š! And an easy way to give veggies to your kid! š
Ingredients
( for 2 adults+ toddler)
50g Parmesan
250g peeled and sliced carrots
1 egg
1 tsp salt
150g flour
2 tablespoons butter
handful sage leaves
Method
Bring a large pot of water to boil.
Add carrots and cook until tender, about 20 minutes.
Mash the carrots until smooth. Let cool.
Combine flour , egg, grated Parmesan and salt with carrot mixture and stir well.If the mixture is too sticky add more flour.
When youāre happy that the consistency is correct, cut the gnocchi dough into 4-5 pieces and roll into long sausage shapes about 2 cm in diameter.
Cut each sausage into 2-3 cm lengths.
Bring a large pot of salted water to boil.
Cook until the gnocchi float and remove with a slotted spoon.
Transfer them in a large oven dish.
In a small pan melt butter in and add in sage leaves.
Pour the melted butter over the gnocchi and sprinkle with Parmesan before serving.
I like them very simple but if you like different sauce you can try with a nice tomato sauce or with a courgette sauce !š
š¶š» Cut the gnocchi quarters if you serve to a baby under 18 months.
