These pancakes are a hit here at our house! I love how easy and quick they come together, they taste delicious and are a nice source of both a veggie and fruit. Sweetened only with fruit and vegetables, they are brilliant for baby led weaning and as a first finger food too!
Ingredients:
(Make 12-15 baby pancakes)
1 medium/large banana (ripe is better)
1 carrot, peeled and grated (approximately 100g)
150g rolled oats (or gluten free oats)
40g almond flour
1 tbsp chia seeds
180ml milk of choice (I used oat milk)
1 tsp baking powder

Method:
Place all the ingredients into a food processor - blender and pulse until they form a smooth, thick batter.
Let the mixture sit for 5-10 minutes so it can thicken up.
Then pour 1-2 tablespoon of batter onto a non sticky skillet (or lightly greased with coconut oil) on a medium heat.
As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking the pancakes, flip and cook the other side until brown.
Top with fruits and your favourite toppings and serve!
