Todayās lunch Grace had cauliflower soup with sliced toasted bread š and plum tomatoes š !
Ingredients
30g chopped onion
30g olive oil
400g cauliflower
100g potatoes
200g soya milk
1/2 tsp salt
Method
Heat the oil in a deep pan over a medium heat.
Add the chopped onion and fry for 2-3 minutes, or until just softened.
Add cauliflower cut in florets , potatoes cut in small pieces, soya milk and salt, cover and cook for about 30 minutes.
Then when the potatoes and the cauliflowers are soft blend everything until completely smooth!
