These choco - zucchini waffles are easy, hearty and are a deliciously filling breakfast! Donāt have a waffle iron? You can use this batter for pancakes too!
Ingredients
(I make 4 large waffle with this quantity)
150g oats
100g grated zucchini
1 small ripe banana
2 tbsps chia seeds
2 tbsps peanut butter (You can use any nut butter or unsalted butter if you like)
2 tsp cocoa powder
150ml milk of choice (I used oat milk)
1 tsp vanilla extract (optional)
NOTE: if you want a sweeter breakfast add 1-2 tbsp of maple syrup in the mixture. Donāt want chocolate? You can easily omit the cocoa powder in your mixture.
Method
Preheat your waffle iron and grease each waffle mould with a little of coconut oil.
Place the oats in a food process and pulse until becomes a fine powder.
Take your grated zucchini and squeeze out as much water as possible.
Add in the banana, chia seeds, peanut butter, grated zucchini, cocoa powder milk and the vanilla extract and pulse until form a thick batter.
Pour out the batter in the waffle maker and close the machine.
Allow to cook for 5-10 minutes until golden and crispy.
Once cooked, remove the ready waffles and repeat until the batter is finished.
Serve with your favourite toppings.
