This homemade Courgette Pesto is a great way to eat more greens and is so creamy, healthy and tasty! š We loved it with linguine pasta and a sprinkle of Parmesan! š If you try it let me know what you think!š„°
Ingredients:
200g courgettes cut in pieces
30g Parmesan cut in pieces
10 fresh basil leaves
20g pistachios or almonds
30g olive oil
pinch of salt
Method:
Place the courgettes in a steamer or in a saucepan with boiling water for 10-15 minutes, until they become soft.
When cooked remove from the steamer/saucepan and let them cool a bit.
Place cooled courgette and all the ingredients in a food processor and blend for about 30 seconds, until the pesto is completely smooth.
Bring a pot of water to a boil and cook pasta according to package directions.
Drain pasta and toss with courgettes pesto to thoroughly coat.
Sprinkle with Parmesan and enjoy! š
