This simple broccoli pasta includes a handful of ingredients most of your have already in the fridge! A super simple recipe perfect for a quick and easy kid-friendly meal!
Ingredients:
150g pasta of your choice
120-150g broccoli florets
2 big tablespoons cream cheese, or dairy free cream cheese
1 garlic clove, finely chopped
2 tsp olive oil
Salt & pepper to taste
Method:
Bring a pot of salted water to a boil, add broccoli florets and cook for 10-15 minutes until very tender.
Cook pasta according to directions.
Meanwhile heat the olive oil in a large pan, add the garlic and cook until the garlic is fragrant and golden.
Drain broccoli and add into the pan.
Cook for a couple of minutes and start breaking apart the broccoli with a spatula into tiny pieces.
Add the pasta and 2 big tablespoons of cream cheese (dd a little of pasta water if you like it a little more ” saucy “) and mix well.
Taste for salt & pepper.
Serve with grated Parmesan If desired.
