CREAMY BROCCOLI šŸ„¦ PASTA ON ECORASCALS PLATE
An easy and nutritious pasta recipe made with broccoli and cream cheese!

Ingredients

(makes one kidā€™s portion)

  • 50-60g uncooked pasta

  • 4-5 broccoli florets, cooked in boiling water or steamed

  • 2 big tablespoons of cream cheese/vegan cream cheese*

  • 1 teaspoon lazy garlic or 1 garlic clove, minced

  • 2 tbsp olive oil

  • Salt & pepper to taste - optional

* NOTE: for young babies you can use mascarpone instead as itā€™s naturally lower in sodium



CREAMY BROCCOLI šŸ„¦ PASTA ON ECORASCALS PLATE

Method

  1. Cook the pasta according to the instructions on the pack.

  2. Heat the olive oil in a medium pan, add the minced garlic and cook until fragrant.

  3. Add the broccoli florets and cook for 3-4 minutes. Remove from the heat and set apart.

  4. Place the cream cheese in a food processor then add the broccoli and a couple of spoonfuls of pasta water. Season with salt and pepper if you wish and pulse until smooth and creamy. You may need to add a dash more water until you reach the consistency you like best.

  5. Coat your cooked pasta with the broccoli sauce.

  6. Serve with some grated Parmesan, if desired.

  7. Enjoy!
