If you need a speedy but super healthy meal, this is the recipe for you! This Super Green Pasta, packed with goodness, is a nutritious and flavorful meal for baby and toddler! If you donāt have peas, you can add any type of veggies you have at home!
Ingredients:
250g pasta of your choice ( uncooked weight)
200g fresh spinach, washed
100ml milk (I used oat)
25g butter (I used vegan butter)
1/2 tsp vegetable stock powder
100g frozen peas
30g grated Parmesan, plus extra for serving
Salt & pepper, to taste
Method:
In a saucepan melt the butter on a medium heat, add the washed spinach and cook for 8-10 minutes.
Meanwhile, bring a large pot of salted water to the boil and cook pasta according to package directions adding the peas for the final 2 mins.
Add milk, and vegetable stock to the spinach and cook for 10 minutes.
Transfer the cooked spinach in a food processor, add the grated Parmesan and blend until completely smooth. Taste and adjust the salt & pepper.
Add the spinach sauce to your pasta & peas, mix well.
ServeĀ with freshly ground black pepper, a drizzle of olive oil and extra parmesan cheese if you like.
