This incredibly easy frozen yogurt cups are a great idea for a quick brekkie, morning tea or afternoon snack! Plus you can easily customize them with the ingredients you have on hand!
Ingredients
(makes 7-8 cups)
100g porridge oat
80g smooth peanut butter (if your peanut butter is too thick, melt it with the coconut oil before mix it with oat)
30g coconut oil, melted
250g Greek yogurt (dairy free yogurt can be used)
50g fresh berries (blueberries, strawberries or raspberries)
1-3 tbsps maple syrup, agave syrup or honey (avoid honey for babies under 1 year old), OPTIONAL
1 tsp vanilla extract, OPTIONAL
Chopped berries for topping (you can use chocolate chips too if you like) OPTIONAL
Method
In a bowl combine oats, peanut butter & coconut oil.
Spoon the oat mixture evenly into lined muffin tin, pressing firmly into the bottom. Set apart.
In a blender pour 2 tbsps of the yogurt, berries, vanilla extract & maple syrup (if used) and blend until combined.
Add the rest of the yogurt, mix it and divide it evenly between the muffin liners.
Top with your choice of berries(Optional).
Put in the freezer for about two hours or until the yogurt is frozen.
