Ingredients
2 eggs
2 tbsp self raising flour*
2 tbsp milk of your choice (I used oat milk)
1-2 tbsp grated Parmesan (or dairy free cheese)
Cheddar cheese (optional)
pinch of salt (optional-I didnāt used it)
a handful frozen peas
a handful of fresh spinach, washed
1 tbsp olive oil for cooking
*NOTE: you can substitute the self raising flour with 2 tbsp of flour and 1 tsp baking powder
Method
In a blender mix well, egg, flour, grated Parmesan and spinach.
Heat the olive oil in a non-stick small pan over medium-hight heat then add the frozen peas and cook until the peas are just tender.
Add the egg mixture to the pan and sprinkle the omelette with some grated/pieces of cheddar cheese.
When itās cooked enough that you can get a spatula underneath without breaking it, flip and cook for a couple of minutes on the other side until cooked.
Allow to cool a bit and serve.
