This is one of my favourite ālazy dinnerā. Itās the perfect meal/snack when I have no time or just Iām not in the mood for cooking! I like them very simple and serve with hummus and veggies, but you can adjust the toppings however youād like!
Ingredients
4 slices bread of choice
200g tomatoes passata
Grated mozzarella or cheddar cheese (quantity on taste). Vegan cheese for vegan version
Olive oil
Handful of small tomatoes, sliced
1 tsp dry oregano
Handful of fresh basil leaves, chopped
Salt & pepper to taste
Method
Pre-heat the grill of your oven.
Then grab a bowl and make the tomato sauce mixing the tomato passata with basil, oregano and season to taste.
Lightly toast the bread.
Place the toast on a baking sheet, brash each slice with some olive oil then spread the pizza sauce.
Top with a handful of mozzarella or cheddar cheese followed by the tomato slices or the toppings of your choice.
Place in the oven and cook until the cheese has melted and golden.
Remove from the oven and allow to cool for a few minutes before serving.
