These mini pancakes are super easy to make. Perfect for baby led weaning and older children too!
Ingredients
(make 10 mini pancakes)
1 ripe banana
50g porridge oats
1 egg
Handful of blueberries

Method
Place all the ingredients (apart from the blueberries) into a food processor and pulse until they form a smooth, thick batter.
Once mixed, add the blueberries and mix with a spoon.
Then pour 1 tablespoon of batter onto a non sticky skillet (or lightly greased with coconut oil) on a medium heat.
As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking the pancakes, flip and cook the other side until brown.
Repeat until the pancake mixture is finished.
Enjoy!
Tips
add 1/2 tsp baking powder to make them more fluffy
add 1 tbsp of agave/maple syrup to make them sweeter
These pancakes are easily customizable by adding to the mixture some chocolate chips, a pinch of cinnamon or cocoa powder!
