NO SUGAR COURGETTE & BANANA BREAKFAST BARS

These sugar free healthy oatmeal bars, loaded with nutritious ingredients, are a kid friendly recipe perfect for your blw babies and toddlers! They’re super easy to make, and store so well! I love eating them for breakfast too or as a snack with a layer of peanut butter 😋 sooo good!

Ingredients:

  • 1 large ripe banana (my was 110g)

  • 100g oats

  • 50g courgette, grated & squeezed

  • 50g almond flour, hazelnut flour or desiccated coconut *(see note)

  • 50g Medjool dates, pitted

  • 50ml milk (I used oat)

  • Pinch cinnamon (optional)

  • Fresh Berries, chocolate chips, flakes almonds or your favourite toppings


Method:

  1. Preheat the oven to 180°C (350F) and line a square baking tray (20cm).

  2. Place all the ingredients (apart of the grated courgettes) into a food processor and blend until completely combined.

  3. Once combined add the grated courgette (squeezed) and give everything a very quick whizz to mix through.

  4. Spoon the mixture into the prepared baking tray and smooth over using a spoon, ensure the mixture is evenly spread.

  5. Top with fresh berries (I used blueberries), chocolate chips, sliced banana, flaked almonds or your favourite topping.

  6. Bake at 180°C for 20 minutes, until golden.

  7. Once cooked, remove and leave to cool before cutting into equal bars or squares.

  8. Enjoy!

*Note: you can easily do your homemade almond or hazelnut flour using a high powered blender and blend the almonds/hazelnut for roughly 1-2 minutes until fine and powdery.
