My boyfriend is getting crazy for fruits tarts, so I tried to cook something suitable for Grace too! To do the tarts cups I used the recipe of the Mini Banana & Oat Baked Oatmeal I posted a week ago! Naturally sweet from dates and banana, these cups are perfect for breakfast or as a super healthy snack/dessert! š
All you need is:
60g coconut oil (melted), plus extra for greasing
60g pitted dates (approx. 8 dates)
200g banana mashed
185g rolled oats
1 tsp vanilla extract
filling of your choice
Method:
Preheat oven to 180 degrees and grease a mini muffin tin with coconut oil.
Place all the ingredients in a food processor and pulse until smooth.
Divide the dough between muffin holes and with your finger spread on the sides creating a cup.
Bake for 10-12 minutes (180degrees) until golden.
Remove and allow to cool completely.
Filling each cups with Greek tyogurt or the filling you decided to use and top with your favourite toppings!
