This one pot pasta & lentil is such an easy and nutritious meal! Lentil are a super food: high in minerals and fiber and a fantastic source of protein!
Ingredients
(serve 2 adults and one toddler)
1 400g (240g drained) can of green or brown lentils, rinsed
150-200g small pasta of choice
1/4 onion, finely chopped
1 tsp lazy garlic or 1 minced garlic
2 tablespoons olive oil
5-6 cherry tomatoes, halved
1 tsp salt (avoid for younger babies)
Parmesan, for serving - optional but recommended
Method
In a saucepan sauté garlic and onion in olive oil until golden
Add the cherry tomatoes, the lentils and a glass of water and cook for 5 minutes, until the water boils
Add the tablespoon of salt and the pasta and cook over low-medium heat for about 10 minutes, or until the pasta is cooked, adding a touch of water if needed
Season with salt and pepper and serve with grated parmesan cheese
