Packed with peas and potatoes, these gnocchi are the perfect recipe when you want something different for dinner, and are so easy to make! You can serve them with a little red sauce, but are delicious just with butter and some cheese on the top! So yummy!
Ingredients
( 2 adult portions+toddler)
300g potatoes
180g frozen peas
200g flour
1/2 tsp salt
Method
Bring a large pot of salted water to a boil.
Peel potatoes and add to pot.
Cook until tender but still firm, about 15 minutes.
Drain, cool and mash with a fork or potato masher.
At the same time cook the frozen peas in boiling water, when ready smash them as swell.
Combine mashed potato, mashed peas and flour in a large bowl or in a food processor.
Knead until dough forms a ball (add extra flour if is too sticky).
Shape small portions of the dough into long "snakes".
On a floured surface, cut snakes into half-inch pieces.
Bring a large pot of lightly salted water to a boil.
Drop in gnocchi and cook for 3 to 5 minutes or until gnocchi have risen to the top; drain and serve.
I served it with melted butter and sage...delicious!
