Today for dinner I really fancy something fresh and tasty. So this pasta was the answer! Freshness from the tomatoes and creamy from the avocado! Just delicious!š Plus Hummus and cucumber to complete the meal!
Ingredients:
2 medium/small avocado
250 g cherry/baby plum tomatoes
250g pasta
2 tbsps olive oil
salt & pepper to taste
1/2 tsp dry oregano and dry parsley
Method:
To do this pasta just cut the avocado in chunks, smash a bit of it (for the creamy texture), cut the tomatoes in small pieces and add to the avocado, add olive oil, salt & your favourite seasons (I used dry parsley and oregano) and mix gently.
Cook your favourite pasta, when is ready add pasta to the avocado & tomato sauce.
Mix all together and enjoy!š
