These courgette pancakes are loaded with goodness such as courgette, banana and oats. They are perfect for baby-led weaning and toddler alike!
Ingredients
150g courgette, chopped
1 small ripe banana
100ml milk of choice (I used oat milk)
130g porridge oat
1 teaspoon chia seeds
1-2 tablespoons of maple syrup - optional (to make them sweeter)
1 teaspoon baking powder - optional (to make them fluffier)
Method
Place all the ingredients into a food processor/blender and pulse until they form a smooth batter.
Then pour 1-2 tablespoon of batter onto a non sticky skillet greased with coconut oil on a medium heat.
Use a spoon to spread out the mixture and cook for 2-3 minutes per side, until golden brown.
