I’m receiving many requests for a banana-free pancakes recipe! After many attempts I finally managed to find the perfect one! 🥞
Ingredients
(makes 6 large pancakes)
40g porridge oats
50g flour of choice (I used spelt flour)
180g milk of choice (I used oat milk)
1 tsp chia seeds
1 tbsp coconut oil (can be substitute with sunflower oil)
1/2 tsp baking powder
OPTIONAL 1-2 tbsps maple syrup, agave syrup, cane/coconut sugar or honey (avoid honey for babies under 1 year old)
TIPS FOR ADDING FLAVOR
These vegan pancakes are great just as they are but taste amazing with a little bit of extra flavor. Try adding some:
cinnamon powder
vanilla extract
cocoa powder
chocolate chips
Blueberries
Method
Place all the ingredients into a food processor and pulse until they form a smooth, thick batter.
Let the mixture sit for 5 minutes so it can thicken up.
Then pour 1-2 tablespoon of batter onto a non sticky skillet (or lightly greased with coconut oil) on a medium heat.
As soon as the pancakes are cooked enough that you can get a pancake flipper underneath without breaking the pancakes, flip and cook the other side until brown.
Top with fruits and your favourite toppings and serve!
