This Broccoli burgers are a delicious, healthy lunch/dinner option and they are definitely a hit at our house. I made a kids-sized burgers and served with oven baked sweet potato fries 🍠 and hummus as dip!
Ingredients:
(for 6 kids sized burger)
250 broccoli florets
35g almond flour
15g chickpea flour( but any other flour is fine)
10g bread crumbs
15g rolled oats
30g water
1/2 tsp salt
ground black pepper to taste
olive oil for cooking
Method:
Snap the broccoli into medium-sized florets.
Put the florets into a steamer or colander set over a pan of boiling water.
Cover with a lid and steam for about 10 mins.
When they are soft set them apart and let them cool.
In a small bowl mix the chickpea flour and the water until we get a cream.
In a blender mix together this chickpeas cream with the almond flour.
Add all the ingredients ( oat, bread crumbs, salt and pepper) and only half of the broccoli florets and blend all together until completely mixed.
Now add the rest of the broccoli florets and mix gently to leave some broccoli chunks.
Mix ingredients thoroughly until mixture becomes shapeable.
Divide mixture into 6 portions and form each portion into a patty.
Preheat a large skillet with olive oil on med heat and add broccoli patties to the pan.
Cook for 2 minutes on each side until golden and serve with your favourite sides and dip! 😋
