VEGAN HEALTHY BLUEBERRY WAFFLES šŸ§‡



These waffles are a healthy and easy breakfast/ brunch.šŸ„°Itā€™s one of my favourite weekend breakfast and so quick to make! For Grace I love topped them with fresh fruits, and added agave syrup on my one! DeliciousšŸ˜

Ingredients:

(makes 4 waffles)

  • 200g oats

  • 2 tbsps chia seeds

  • 2 tbsps Maple syrup

  • 250 plant based milk

  • 50g buckwheat flour

  • 1 tbsp coconut oil (plus extra for the waffle iron)

  • handful of fresh blueberries


Method:

  1. Preheat waffle iron.

  2. Place oats in a food processor and pulse until become a fine powder.

  3. Add chia seed, maple syrup, milk, flour and coconut oil and blend all together until form a thick batter.

  4. Once combined stir trough the blueberries.

  5. Add a bit of coconut oil to the waffle iron to grease each waffle mould and pour into it equal of the mixture smoothing out to ensure the waffle mould is filled.

  6. Close and cook for about 5-10 minutes until golden.

  7. Once cooked, remove the waffles and repeat until the mixture is finished.

  8. Top with fruits or your favourite toppings and serve ! šŸ§‡šŸ§‡šŸ§‡šŸ˜‹
