VEGAN LENTIL “MEATBALLS”



These lentils meatballs with tomato sauce are a healthy and delicious recipe for the whole family! 😋 A dish rich in plant proteins, fiber, vitamins and iron! So good for our little humans!🥰

Ingredients:

(for about 20 meatballs)

  • 300g lentils (canned)

  • 1/2 onion

  • 4/5 sun dried tomatoes 1garlic clove

  • 2 tbsps olive oil

  • 60g oat flour

  • 3/4 tbsps bread crumbs

  • a pinch of salt

  • ground black pepper


Ingredients:

(tomato sauce)

  • 80g chopped onion

  • 30g olive oil

  • 1 garlic clove

  • 550g tomato passata or chopped tomatoes

  • 5-6 basil leaves

  • 3/4 tsp salt

  • ground black pepper to taste


Method:

  1. In a food processor add lentils, onion, olive oil, sun dried tomatoes, garlic, salt and pepper. Pulse, mixing until complete combined.

  2. Add the oat flour and the bread crumbs and pulse.

  3. The texture should be dough-like. If the mixture is still too wet add more bread crumbs, if is too dry add a bit of water.

  4. Use a Tablespoon to scoop out rounded tablespoon amounts of dough and carefully form into balls.

  5. Repeat until all meatballs are formed.

  6. Place each “meatball” onto a baking sheet and bake for 20-25 minutes, or until golden brown, turning them halfway through.

  7. Meanwhile, make the tomato sauce.

  8. In a saucepan gently cook the chopped onion and garlic with the olive oil until golden.

  9. Add the tomato passata, basil, salt and pepper and cook on a medium heat for about 20 minutes.

  10. When the lentils meatballs are ready leave them ready for 5 minutes, then add them to the tomato sauce and and spoon the sauce over. Serve ! 😋

  11. I served them with a some mash potato, delicious 😍
