This is a quick and healthy meal you can make in a hurry. This zucchini fritter recipe only needs a few ingredients and is ready in less than half an hour. Plus is a clever way to get the kids to eat more veggies!
Ingredients
2 medium courgettes, grated
150g all purpose flour or wholemeal flour
1 egg (can sub with 1 flax egg)
50ml water
50g Parmesan cheese, grated (optional)
120g cream cheese (or dairy free)
Vegetable oil for frying
Method
Place grated zucchini in a plate and drain the excess moisture using a tea towel or kitchen roll.
In a large bowl mix flour, water and egg. Season with salt and pepper, (if desired).
Add the grated courgettes, Parmesan cheese and cream cheese and mix until combined.
Heat frying oil in a large skillet over medium high heat. Scoop 1 tablespoon of batter for each fritter and cook until the underside is nicely golden brown (adjusting the temperature if browning too quickly). Flip and cook on the other side.
Serve once cooled.
