This puff pastry Palmiers filled with zucchini & cream cheese, tastes so delicious and are very easy to make! They are perfect for lunch with a picky salad, or on its own as a healthy snack!
Ingredients:
200g Cream cheese (can sub with dairy free versions too)
1 large courgette, grated
1 sheet of ready rolled puff pastry
Salt & pepper (optional)
2 tbs spoon olive oil
Sesame seeds (optional)
Method:
Prepare a baking sheet with parchment paper.
Heat a tablespoon of oil in a medium skillet over medium-high heat. Place the grated zucchini and cook for approximately 10-15; remove from the heat, transfer in a bowl and let it cool to room temperature.
Add the cream cheese to the bowl, a pinch of salt & pepper and mix until well combined.
Unroll the puff pastry, and evenly spread the zucchini mixture over, covering edge to edge of the pastry.
Take both shorth edges of the pastry and roll them towards each other to meet in the middle.
Using a sharp knife slice the roll into 1/1.5 cm thick slices.
Lay each piece on the prepared baking tray, sprinkle with some sesame seeds (if used) and bake at 200˚C for 20-25 minutes, until puffed up, crisp and golden.
Remove from the oven and leave to cool on the baking tray for 10 minutes.
