Ingredients
| 1 cup | Broccoli florets |
| 1 1/4 cups | Potatoes, peeled and cubed |
| 180g | Broccoli florets |
| 250g | Potatoes, peeled and cubed |
Recipe Tips
I used Maris Piper potatoes for the best texture and flavour
Method
1
Steam the broccoli and potatoes until soft, then let them cool completely
2
Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper
3
Mash the vegetables well, then take a tablespoon of the mixture, roll into balls and place them on the tray
4
Bake for 20–25 minutes or until golden brown
5
Let the balls cool before serving as they firm up while cooling
6
Buon appetito!
Storage
Refrigerate in an airtight container for up to 2 days
Freeze for up to 3 months
To reheat, thaw in the fridge overnight and warm in the oven
