Ingredients
| 7 oz | Ripe avocado, peeled, stoned |
| 1½ | Self-raising flour |
| 3 tbsp | Unsalted butter, melted |
| 200g | Ripe avocado, peeled, stoned |
| 190g | Self-raising flour |
| 40g | Unsalted butter, melted |
Recipe Tips
To make 190g of self-raising flour at home, mix 190g of plain or spelt flour with 2 teaspoons of baking powder
You can also use dairy-free butter to make these completely dairy free
Method
1
Preheat the oven to 180°C (350°F)
2
Place the avocados in a large bowl and mash them with a fork
3
Add the melted butter and self-raising flour to the bowl and mix together using your hands to make a dough. It should be soft but not sticky (add a little more flour if needed)
4
Roll out the dough on a floured surface or baking paper until ½ cm thick and cut out shapes with a cookie cutter
5
Place the shapes on baking paper on a tray and bake for 15–20 minutes, checking to avoid overcooking
6
Once cooked, allow to cool and serve
7
Buon appetito!
Storage
Keep in an airtight container for up to 2 days
