| 1 small | Banana |
| 1 | Kiwi, ripe |
| 50 g | Flour of choice |
| 1 | Egg |
| 1/2 tsp | Baking powder |

Recipe Tips
Use a very ripe kiwi for extra natural sweetness
Baking powder is optional but helps make the pancakes fluffier
Butter can be used instead of coconut oil
Method
1
Mash the banana and kiwi in a bowl
2
Add the flour, egg and baking powder (if using) and mix until well combined
3
Lightly grease a non-stick skillet with butter or coconut oil and heat over medium heat
4
Drop 1–2 tablespoons of batter into the pan
5
As soon as the pancakes are cooked enough to flip without breaking, turn them over and cook the other side until lightly golden
6
Serve and Buon appetito!
Storage
Store cooled pancakes in an airtight container in the fridge for up to 2 days
For freezing, freeze pancakes individually, then transfer to a freezer bag and store for up to 3 months
Defrost overnight in the fridge or reheat directly in a pan or microwave until warmed through
