Ingredients
| 4.5 oz | Carrot, steamed and mashed |
| 1.8 oz | Parmesan, finely grated |
| 5 oz | All-purpose flour |
| 1.8 oz | Unsalted butter |
| 130 g | Carrot, steamed and mashed |
| 50 g | Parmesan, finely grated |
| 140 g | All-purpose flour |
| 50 g | Unsalted butter |
Recipe Tips
If the dough feels too sticky to roll, refrigerate it for 5–10 minutes to firm up
Olive oil can be used instead of butter
You can use all-purpose flour or white spelt flour
Parmesan, cheddar or a dairy-free cheese alternative all work well
Method
1
Preheat the oven to 180°C (350°F)
2
In a large bowl, mix the mashed carrot, grated cheese and oil or butter
3
Add the flour and mix until a ball of dough forms, using your hands if needed
4
Place the dough on a sheet of parchment paper and roll it out thin, as thinner dough will result in crispier crackers
5
Use a sharp knife or pizza cutter to cut into your desired shapes
6
Bake for about 15 minutes, or until the edges are lightly golden, adjusting timing based on thickness
7
Let the crackers cool completely before serving
8
Buon appetito!
