| 80g | Mashed sweet potato |
| 1 | Egg |
| 20g | Spelt flour |
| ½ tsp | Baking powder |
| A little | Coconut oil or butter for grea |
Recipe Tips
For babies just starting solids around 6 months, cut pancakes into finger-sized strips to match their palmar grasp
Method
1
Mash the sweet potatoes in a bowl
2
Add the remaining ingredients and mix until well combined
3
Lightly grease a nonstick pan and heat over medium-high heat
4
Drop 1 to 2 tablespoons of batter onto the pan
5
Once the pancakes are cooked enough to slide a spatula underneath without breaking, flip and cook the other side until golden brown
6
Allow them to cool slightly before serving with your little one’s favourite toppings
7
Buon appetito!
Storage
Store cooled pancakes in an airtight container in the fridge for up to 3 days
For freezing, place them individually on a baking sheet, then transfer to a freezer bag for up to 2 months
To reheat, use a toaster or microwave until warmed through
